Modified Tapioca Starch; Potato Starch; Arrowroot Powder; Fine White Rice Flour; Cassava Flour; Buckwheat Flour; Maltodextrin (from tapioca); Flaxseed Meal; Psyllium Husk Powder; Sea Salt; Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, tapioca starch, monocalcium phosphate); Xanthan Gum; Cream of Tartar; Baking Soda.

gfJules GLUTEN FREE BREAD MIX  (makes one ~2 lb. loaf)

Ingredients to add to ENTIRE bread mix for Sandwich Loaf:

  • 1 ¼ cups warm water
  • ¼ cup extra virgin olive oil
  • 2* eggs (or substitute like flaxseed meal + water OR 1/2 cup aquafaba)
  • 4 Tbs. (56 grams) sugar (or other sweetener like monkfruit or Swerve or maple sugar) OR honey (reduce water by 2 Tbs if using honey)
  • 1 quick rise yeast packet (2 1/4 tsp. yeast)
  • Optional toppings/mix-ins: sesame or sunflower seeds, raisins, herbs, etc.
    *egg sizes have been inconsistent lately; use XL eggs or try 3 large eggs for best results

Oven Directions (for more detailed baking instructions & videos, see Jules's Sandwich Bread recipe post by clicking HERE):

  1. Bring eggs & liquids to room temperature and stir together in a large mixing bowl. 
  2. Slowly stir in bread mix, sugar and yeast until integrated. Beat well for 2 minutes. 
  3. Transfer dough to oiled bread pan and cover with oiled parchment or cling wrap. 
  4. Rise 1 hour in warm place or 200°F oven that’s been turned off.
  5. Bake in 350°F oven for 60 minutes or until toothpick inserted into center of loaf comes out clean or with dry crumbs. Internal temperature should be 205°F.  
  6. Remove to wire rack to fully cool before slicing.

Bread Machine Directions:

  1. Bring eggs & liquids to room temperature then add to the bread machine pan.
  2. Pour entire bread mix on top of liquids in pan.
  3. Make a small well in the center of the dry mix and pour sugar plus contents of yeast packet.
  4. Choose bread machine's “Gluten Free” setting. During mix cycle, stir with a rubber spatula if necessary to help integrate ingredients before rise cycle.
  5. When bake cycle is complete, a toothpick inserted into the center of the loaf should come out clean or with dry crumbs; the internal temperature should be 205°F. 
  6. Remove to wire rack to cool before slicing.

INGREDIENTS TO ADD

  • 1¼ cups warm water

  • ¼ cup extra virgin olive oil

  • 2 XL eggs or substitute

    • Optional substitutes:

      • Flaxseed meal + water

      • ½ cup aquafaba

  • 4 Tbs. sugar or sweetener

    • Alternatives:

      • Monkfruit

      • Swerve

      • Maple sugar

      • Honey (reduce water by 2 Tbs if using)

  • 1 packet quick rise yeast (2¼ tsp.)

  • Optional toppings or mix-ins:

    • Sesame seeds

    • Sunflower seeds

    • Raisins

    • Herbs

OVEN DIRECTIONS

  1. Bring eggs and liquids to room temperature and stir together in a large mixing bowl.

  2. Slowly stir in the bread mix, sugar, and yeast until fully combined.

  3. Beat well for 2 minutes.

  4. Transfer dough to an oiled bread pan and cover with oiled parchment or cling film.

  5. Allow dough to rise for 1 hour in a warm place or in a turned-off 200°F oven.

  6. Bake at 350°F for approximately 60 minutes or until a toothpick inserted into the center comes out clean or with dry crumbs.

  7. Bread should reach an internal temperature of 205°F.

  8. Remove from pan and cool fully on a wire rack before slicing.

BREAD MACHINE DIRECTIONS

  1. Bring eggs and liquids to room temperature and add to the bread machine pan.

  2. Pour the entire gluten free bread mix over the liquids.

  3. Create a small well in the center and add sugar and yeast.

  4. Select your bread machine’s “Gluten Free” setting.

  5. During mixing, use a rubber spatula if needed to help incorporate ingredients.

  6. Once baked, the loaf should reach an internal temperature of 205°F.

  7. Remove and cool fully before slicing.

I made the loaf in my bread machine but it did not turn out very well. My machine is not quite right for the mix. The bread was not baked long enough, My machine claims to bake up to a two pound loaf but it is really engineered for only 1.5, so the bread was too dense and not quite cooked all the way through but beautifully browned on all sides. It is still delicious toasted with butter and jam.

My experience was a fun wild one with gfJules gluten free mix. I went into doing this with the anticipation the preparation would be the same as regular bread. I was WRONG. This bread flour makes the best loaf of any I’ve made. I make it in a Zojirushi bread machine with the following modifications to the GFJules recipe: 1. Put measured amount of yeast in small bowl to bring to room temp; 2. Remove bread pan and fill with hot water; 3. Put the eggs in the hot water to warm them. 4. Use seltzer water instead of tap, 5. Separate the eggs and beat the whites; 6. Stir and heat all liquid except egg whites in microwave for 45 seconds; 7. Open flour packet and heat in microwave 45 seconds; 8. Dump out the bread pan and add warmed liquid, then egg whites, stir to blend; 9. Add dry ingredients as instructed; 10. Bake. a. No rest period, b. 20 min knead, c. Shape off, d. Rise 1 hour 10 minutes, use an oil covered tool to make the dough ball fill the pan with a flat top during the early part of the rise period, e. Rise 2 and 3 off, f. Bake 1 hour 22 minutes. This makes a large soft loaf with just the right crust. My wife is the one who’s gluten free and she loves this bread! Much, much better than anything store bought, and better than my many previous attempts.

I use the flour mix to make the apple bread from the recipe you provided but I have to cook it much longer and a much higher temperature than the recipe calls for.
