INGREDIENTS:
Non-GMO & Vegan Ingredients:
Modified Tapioca Starch; Potato Starch; Cornstarch; Cane Sugar; White Rice Flour; Corn Flour; Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, mono calcium phosphate); Xanthan Gum; Baking Soda.
You’ll Need:
- 3 Tbs. butter / vegan butter (cold)
- 1 egg or substitute
- 7 Tbs. yogurt (or vegan yogurt)
- 1/3 cup berries, raisins, nuts, or chocolate chips
Instructions:
- Preheat oven to 400°F. Prepare baking sheet by lining with parchment paper and setting aside.
- Pour mix into a bowl and cut 2 tablespoons butter into the mix until pebbly, using a pastry cutter or two butter knives (or may be done with mixer or food processor). Using a fork, stir in egg and yogurt until dough is formed. Gently fold in fruit, nuts, or chips.
- Turn dough onto a clean counter or pastry mat dusted with gluten free flour. Pat dough to a thickness of ¾ - 1 inch. Cut into triangles or circles. Place onto baking sheet and top with remaining butter.
- Bake for 8-9 minutes, just until the tops are lightly browned and a toothpick inserted into the center comes out clean, but not wet.
