gfJules Gluten Free Muffin Mix makes 12-15 muffins
for Gluten-Free Blueberry Muffins:
Ingredients to add to Mix:
6 Tbs. butter or vegan butter
2 eggs or substitute (like aquafaba or flax egg)
1/4 cup maple syrup OR honey OR agave
1/4 cup sugar if you like a sweeter muffin (optional)
1/2 cup milk of choice
1/2 cup + berries
Preheat oven to 350F.
Oil or line 12-15 muffin pans with papers.
Cream butter with 1/2 can of mix until light and fluffy.
Add maple ingredient and eggs and beat well.
Gradually blend in remaining mix together with the milk until integrated. Gently fold in berries.
Spoon batter into prepared muffin pans 3/4 full.
Bake for 25 minutes or until lightly browned and a toothpick inserted into the middle comes out clean.
Cool on wire racks. Once cooled, store in sealed container on the counter to preserve freshness.
OR follow this recipe For Banana, Apple or Pumpkin Muffins:
Ingredients to add to Mix:
- 1/2 cup (8 Tbs) butter or vegan butter
- 2 eggs or substitute (like aquafaba or flax egg)
- 1/2 cup sour cream OR vanilla yogurt (dairy or non-dairy)
- 1 cup ripe banana (~2 bananas) OR 3/4 cup applesauce OR pumpkin purée
- 1 1/2 cup berries OR 3/4 cup chocolate chips OR 1 chopped, peeled apple (optional)
- cinnamon/sugar mixture sprinkled on top (optional)
Preheat oven to 350°F.
Oil or line 15-20 muffin pans with papers (depending on size of muffins).*
Cream butter with 1/2 of mix until light.
Add eggs with sour cream/yogurt and mashed banana/applesauce/pumpkin and mix until smooth.
Gradually blend in remaining mix until integrated, then gently stir in berries, chips or apples.
Spoon batter into muffin tins 2/3 full. Sprinkle cinnamon & sugar on top, if desired.
Bake for 30 minutes or until lightly browned and a toothpick inserted into the middle comes out clean. Cool on wire racks.
*Jules recommends these muffin liners to prevent muffins from sticking to the papers.
