 gfJules NADA Flour Recipe: Lemon-Bites 

INGREDIENTS

¾ cup + 1 Tbs. milk, dairy, or non-dairy

2 Tbs. lemon juice

¾ cup butter or vegan butter

1 ¼ cup granulated sugar or sub

3 eggs, room temp, or sub around 9 Tbs. aquafaba

2 ½ cups (275 gr) gfJules NADA Flour

1 Tbs. baking powder

½ tsp. fine sea salt

1 Tbs. lemon zest

INSTRUCTIONS

In a large mixing bowl, whip butter and sugar at medium-high 6 minutes, until light and fluffy.

Add the eggs, one at a time, mixing in between each.

Whisk dry ingredients together, then add, alternating with milk mixture, beating until fully integrated.

Fold lemon zest in last.

Scoop batter into prepared pans, filling only ¾ full.

Bake for around 10 minutes or until a toothpick in the center comes out with only a few moist crumbs.

Remove to cool on a wire rack.

This was my second bulk order of your wonderful flour. My first order was several months ago, maybe close to a year ago , the expiration date for that order was April 2026. My most recent order of 12 packages of your flour was received today and I’m very unhappy to say all the packages I received today also expire this April. This is my third order of double packages of the Nada. My husband uses it to make pancakes. So yummy! My daughter made the lemon pound cake. The outside tastes like what I remember Danish Butter cookie did. The inside soft. I personally plan to add more lemon juice and zest with bake2. oh yes and blueberries too. the bread I made with you nada bread mix was wonderful -- a few more steps but worth it baked goods so far with this flour taste fine the first day baked but although moist do not taste as good the next. I have tried 2 different recipes but am having difficulty to get it to rise. The texture is very close to the bread I am used to but cannot get a loaf of bread. I have to say it has promise. I will keep tweaking until I get a good loaf.

I think the product is good and the problem is simply that I don’t care for cassava flour. I have experimented with it and Tiger Nut Flour a lot and I love Tiger Nut Flour and its performance particularly mixed with Buckwheat flour; but, once I add in Cassava Flour, the product gets gummy. I believe Cassava Flour is simply too starchy. When I could eat them, I loved whole grains and the texture they gave products, so Cassava simply doesn’t do it for me.

I DO NOT RECOMNEND Nada flour! Twice now I attempted to make quick breads with it that totally bombed. I weighed the flour precisely and followed the recipes exactly, which were Paleo recipes calling for either Tigernut or Cassava flour. I did not use one of the recipes Jukes lists for this flour because most call for too much sugar to be healthy. I am an experienced baker and never had such awful results before. I’m quite upset since the flour and eggs (10) are expensive!

Store owner replied: Hi Alison, I'm sorry you've not had good luck with the recipes you've chosen. Without seeing the recipes, it's hard to tell, but you're describing them as paleo recipes using tigernut or cassava flour. Nada Flour was developed as an all purpose flour to replace regular flour, not to replace recipes calling for either tigernut or cassava. Those kinds of recipes will be quite different in moisture and structure than a typical recipe. If you've seen quick bread recipes using Nada Flour on my site, you'll have seen beautiful loaves of quick breads! These are standard recipes made grain free simply by using Nada instead. Furthermore, to reduce or eliminate sugar in a quick bread recipe will absolutely change the structure and texture of a quick bread. Sugar isn't there just for sweetening -- it plays a critical role in the chemical reactions that make quick breads and muffins light and fluffy. Reducing sugars in these recipes without compensating can result in bakes with drastically different, dense, un-browned, and unleavened outcomes. It sounds like you've made at least two fundamental changes to the recipes you're using: flour and sugar. I can't imagine you'd be met with great success. I hope you try one of your grandmother's quick bread recipes with Nada Flour, or use a recipe on my site! I know you'll find it much more pleasing. However, reach out to us for a refund of your product if you're still not satisfied, as we only want our customers to be happy. ~jules

My daughter suspects that xanthan gum is giving her trouble...I've been using GF Jules All-Purpose Flour for a couple of years and have been very happy with it, so I decided to try NADA. It is a little different-slight taste difference, a little more crumbly, and it seems like it needs a little lower temperature and/or shorter cooking time to keep it from burning-but it has worked very well in the cookies and crumb crusts that I've tried, and my daughter was thrilled...she had no reaction to any of it!

I have been making our sourdough sandwich bread with this awesome flour! Using the original sourdough bread recipe (that uses the all purpose flour), I have found if I double the baking powder and baking soda it rises just fine! We needed non yeast bread. Would like to see a 25 lb available in the future! The whole game has voted this our favorite bread!

Firstly, I’m an experienced baker. I wanted to love Nada, but my first attempt at pie crusts for the family Xmas dinner fell flat. The single crust recipe was not enough for the stated 10” pie tin. The crust was thin and dry. At their request, I’ll go back to my beloved all-purpose flour crusts for the family, and suffer alone, pie-less, until I master Nada.
