Yes, rice flour is naturally gluten-free! But most store-bought gluten free flours use WAY to much of it, which is why the bakes they produce are dry, crumbly, and gritty. gfJules Flour has a tiny amount of confectioners-grade white rice flour that adds zero grit to her mix.

You absolutely can! While the process feels like a little bit of magic, you can create a bubbly, active starter using Jules’ gluten-free flour. But (there's always a 'but,' right?), use the wrong flour - a rice-based blend - and your results will NOT feel, look, or taste like the sourdough you're craving.
