Ingredients to add to entire can:
4 eggs (or egg substitute) 6 Tbs. vegetable or coconut oil, melted
2 1/2 – 3 C milk of choice Optional: berries, chocolate chips, etc.
To use entire can (20 pancakes), mix ingredients from above as directed below.
For 1/2 can (10 pancakes), use 1 2/3 cup mix, 2 eggs, 3 Tbs. oil & 1 1/4 -1 1/2 cups milk.
Whisk together eggs & oil. Gradually add mix and most of milk, whisking until smooth. Add more milk, as needed, to thin the batter so that it can be easily spooned into pan, but is not watery (the type of milk you use may change the thickness of the batter). Stir in any berry or chip additions.
For Pancakes: No oil is needed with non-stick pan. For others, lightly cover bottom with oil. Heat to medium. Spoon batter into pan and spread with spoon to make thinner. Cook until bubbles form, then flip. Cook until both sides are light brown. Let cool slightly before serving.
For Waffles: Make according to waffle maker’s directions.
To serve later, or for leftovers, refrigerate/freeze in zip-top bag with wax paper between pancakes/waffles.
