You’ll Need:

  • 3 Tbs. butter / vegan butter (cold)
  • 1 egg or substitute 
  • 7 Tbs. yogurt (or vegan yogurt)
  • 1/3 cup berries, raisins, nuts, or chocolate chips

Instructions:

  1. Preheat oven to 400°F. Prepare baking sheet by lining with parchment paper and setting aside.
  2. Pour mix into a bowl and cut 2 tablespoons butter into the mix until pebbly, using a pastry cutter or two butter knives (or may be done with mixer or food processor). Using a fork, stir in egg and yogurt until dough is formed. Gently fold in fruit, nuts, or chips.
  3. Turn dough onto a clean counter or pastry mat dusted with gluten free flour. Pat dough to a thickness of ¾ - 1 inch. Cut into triangles or circles. Place onto baking sheet and top with remaining butter. 
  4. Bake for 8-9 minutes, just until the tops are lightly browned and a toothpick inserted into the center comes out clean, but not wet.

Easy to mix up and delicious. The third tablespoon of butter goes on top before placing in the oven. I made with raisins. Glad I ordered 2 mix bags. Looking forward to the second batch. Would be great if it made 8 scones. Here they are with other brunch foods-frittata, sausages, scone toppings and drinks.

Store owner replied: Hi Barbara, it sounds like something definitely went wrong when you made these, as the scones are moist and yummy when baked up. Perhaps they baked too long? What did you add as far as mix-ins? There's not much sugar in the mix at all (scones aren't supposed to be super sweet), so we note that you can add more if you like, or the mix-ins like berries or chocolate chips provide added sweetness. Also using vanilla yogurt instead of plain flavor can add a bit more flavor if you prefer as well.

Have used GF Jukes flour for quite some time. First time trying the scone mix. I added cinnamon chips and sprinkled with cinnamon and sugar. Sooooo yummy!

The scones were good. I added cranberry and chocolate bits. It was a bit difficult to cut them and put them on the cookie sheet... I am sure it was me and I just needed a little more practice. Otherwise for gluten free they were tasty.

I have made scones gluten free by myself, but it’s so much easier to just use the gfjules mix, and is just as good. When I was doing it myself, I didn’t know about this flour and mix. Everything I have used has been so much easier and good. At 84 years of age, easier is good.😂
